Have a 4 1/2 lb beef eye round...looking to roast for roast beef...any suggestions?

An eye of the round is a beautiful cut of meat.





Put it in a shallow roasting pan. Sprinkle it with a little salt and pepper. and rosemary. Us a meat thermometer and bake at 325 to 350 degrees till the internal temp reach where you want. I suggest medium rare on the thermometer. Let rest a few minutes then carve. Use the pan drippings and juices from carving to make gravy, YummmmmmmHave a 4 1/2 lb beef eye round...looking to roast for roast beef...any suggestions?
You can't mess this one up! Throw it in a crock pot with an onion*, can of tomatoes*, and potatoes. Even if it's frozen, it's okay. You can also add a can of cream of mushroom soup or a packet on onion soup if you wish. Cover with water, cover, and cook on low for 8 hours. It's amazing an so easy! * the tomatoes and onion will make the meat so tender, it will fall apart! After you eat the roast, add a bag of frozen veggies and a can of tomato juice to the broth and you'll have an amazing vegetable soup! Or add sliced onion to the broth and top it with crutons and cheese to make French onion soup.
